- 1 lb 450 g Italian sausage (mild or spicy), cut into chunks
- 1 ½ lbs 680 g baby potatoes, halved
- 2 bell peppers red and yellow, sliced
- 1 large red onion sliced
- 3 tbsp olive oil
- 1 tsp Italian seasoning
- ½ tsp smoked paprika
- Salt & black pepper to taste
- Fresh parsley chopped (for garnish)
Preheat oven to 400°F (200°C).
On a large sheet pan, spread potatoes, peppers, onion, and sausage.
Drizzle with olive oil, then sprinkle Italian seasoning, paprika, salt, and pepper. Toss everything to coat evenly.
Spread into a single layer for even roasting.
Roast for 35–40 minutes, flipping halfway, until potatoes are tender and sausage is browned.
