Ingredients
  

  • 2 large boneless skinless chicken breasts (about 1.5 lbs), cut into bite-size pieces
  • 6 slices bacon cooked and crumbled
  • 1 cup shredded cheddar cheese or mozzarella
  • 2 cups cauliflower rice steamed or sautéed
  • 1/2 cup ranch dressing keto-friendly, store-bought or homemade
  • 1 tbsp olive oil or avocado oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • Optional toppings: chopped green onions fresh parsley, avocado slices

Instructions
 

  • Cook the bacon: In a skillet, cook bacon until crispy. Remove, crumble, and set aside. Leave about 1 tbsp bacon grease in the pan.
  • Cook the chicken: Season chicken with garlic powder, onion powder, paprika, salt, and pepper. Cook in the bacon grease (or oil) until golden brown and cooked through (about 6–8 minutes).
  • Prepare cauliflower rice: In a separate pan, sauté cauliflower rice in olive oil for 3–4 minutes until tender. Season lightly with salt and pepper.
  • Assemble the bowls: Divide cauliflower rice among 4 bowls. Top with chicken, bacon crumbles, shredded cheese, and a drizzle of ranch dressing.
  • Garnish: Add fresh parsley, green onions, or avocado slices for extra flavor and healthy fats.

Notes

  • Swap cauliflower rice for zucchini noodles or a green salad base if you prefer.
  • Use rotisserie chicken for a quicker version.
  • Make it spicier with a drizzle of hot sauce or buffalo ranch.
