Ingredients
  

  • 1 lb 450 g smoked sausage or andouille sausage, sliced
  • 4 cups 960 ml chicken broth
  • 4 medium potatoes diced
  • 1 medium onion chopped
  • 2 celery stalks diced
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 2 tbsp butter
  • 2 tsp Cajun seasoning plus more to taste
  • ½ tsp smoked paprika
  • Salt & black pepper to taste
  • 2 green onions sliced (for garnish)

Instructions
 

  • Set the Instant Pot to Sauté mode. Melt butter, then add sausage and cook until lightly browned.
  • Add onion, celery, and garlic; sauté for 2–3 minutes until softened.
  • Stir in diced potatoes, Cajun seasoning, paprika, salt, and pepper. Pour in chicken broth and mix well.
  • Cancel Sauté. Secure the lid, set the valve to sealing, and cook on High Pressure for 8 minutes.
  • Quick-release the pressure once cooking is complete. Stir in heavy cream and adjust seasonings as needed.
  • Serve hot, garnished with green onions.

Notes

  • For extra heat, add a pinch of cayenne pepper or more Cajun seasoning.
  • Swap heavy cream for half-and-half or evaporated milk for a lighter option.
  • This soup thickens as it cools; add extra broth if reheating leftovers.
  • Works great with diced chicken breast instead of sausage.
