Ingredients
  

  • 1 ½ lbs 700 g boneless skinless chicken breasts, cut into cubes
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 3 garlic cloves minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt & black pepper to taste
  • 1 red bell pepper cut into chunks
  • 1 green bell pepper cut into chunks
  • 1 red onion cut into wedges
  • Wooden or metal skewers

Instructions
 

  • In a bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, and pepper.
  • Add chicken cubes to the marinade, toss well, cover, and refrigerate for at least 30 minutes (up to 2 hours for best flavor).
  • Preheat grill (or grill pan) to medium-high heat.
  • Thread marinated chicken, bell peppers, and onion onto skewers, alternating for color.
  • Grill skewers for 12–15 minutes, turning occasionally, until chicken is fully cooked (165°F / 74°C internal temperature).
  • Serve hot with tzatziki sauce, pita bread, or a fresh Greek salad.

Notes

  • Soak wooden skewers in water for 20–30 minutes before grilling to prevent burning.
  • You can also bake kabobs at 425°F (220°C) for 20–25 minutes if you don’t have a grill.
  • Add zucchini, cherry tomatoes, or mushrooms for extra veggies.
  • For meal prep, store leftovers in the fridge up to 3 days.
