- 1 lb ground beef or ground turkey
- 1 packet taco seasoning or homemade blend
- 1 cup salsa or taco sauce
- 1 can 15 oz black beans, drained and rinsed
- 1 cup corn frozen or canned, drained
- 6 flour tortillas medium-sized
- 2 cups shredded cheddar cheese or Mexican blend
- ½ cup sour cream optional, for topping
- Fresh cilantro for garnish
Cook the Meat: In a skillet, brown the ground beef. Drain excess fat, then stir in taco seasoning and a splash of water. Simmer for 2–3 minutes.
Add the Fillings: Mix in salsa, black beans, and corn. Stir until heated through.
Assemble the Lasagna:
Grease a 9x13 baking dish.
Layer 2 tortillas on the bottom.
Spread a portion of the beef mixture over the tortillas.
Sprinkle with cheese.
Repeat layers until all ingredients are used, finishing with cheese on top.
Bake: Cover with foil and bake at 375°F (190°C) for 20 minutes. Remove foil and bake another 10 minutes, until cheese is bubbly.
Serve: Let rest 5 minutes, then slice like lasagna. Top with sour cream and fresh cilantro.
