Ingredients
  

  • 1 lb ground beef or ground turkey
  • 1 packet taco seasoning or homemade blend
  • 1 cup salsa or taco sauce
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn frozen or canned, drained
  • 6 flour tortillas medium-sized
  • 2 cups shredded cheddar cheese or Mexican blend
  • ½ cup sour cream optional, for topping
  • Fresh cilantro for garnish

Instructions
 

  • Cook the Meat: In a skillet, brown the ground beef. Drain excess fat, then stir in taco seasoning and a splash of water. Simmer for 2–3 minutes.
  • Add the Fillings: Mix in salsa, black beans, and corn. Stir until heated through.
  • Assemble the Lasagna:
  • Grease a 9x13 baking dish.
  • Layer 2 tortillas on the bottom.
  • Spread a portion of the beef mixture over the tortillas.
  • Sprinkle with cheese.
  • Repeat layers until all ingredients are used, finishing with cheese on top.
  • Bake: Cover with foil and bake at 375°F (190°C) for 20 minutes. Remove foil and bake another 10 minutes, until cheese is bubbly.
  • Serve: Let rest 5 minutes, then slice like lasagna. Top with sour cream and fresh cilantro.

Notes

  • Add avocado or guacamole on top for extra creaminess.
  • Serve with a simple side salad for balance.
  • Great for meal prep reheats well!
