Ingredients

  • 1 can 16 oz refrigerated biscuit dough
  • 1 lb breakfast sausage
  • ¼ cup butter
  • ¼ cup all-purpose flour
  • 2 cups whole milk
  • Salt and black pepper to taste
  • 6 large eggs
  • 1 tbsp butter for eggs
  • 2 cups shredded cheddar cheese or a mix of cheddar and mozzarella
  • Optional toppings: chopped green onions crumbled bacon, or hot sauce

Instructions

  • Preheat oven: Heat oven to 375°F (190°C).
  • Prepare crust: Separate biscuits and press them into a greased 12-inch pizza pan or baking sheet, forming a crust. Bake 8–10 minutes until lightly golden.
  • Cook sausage: In a skillet over medium heat, cook sausage until browned and crumbled. Remove sausage, leaving drippings in the pan.
  • Make gravy: Add butter to drippings. Once melted, whisk in flour and cook 1 minute. Gradually whisk in milk, stirring until thickened. Season with salt and pepper. Return sausage to gravy and keep warm.
  • Scramble eggs: In another pan, melt butter over medium heat. Whisk eggs, season lightly, and scramble until just set.
  • Assemble pizza: Spread sausage gravy over baked biscuit crust. Top with scrambled eggs, then sprinkle with shredded cheese.
  • Bake: Return to oven and bake another 8–10 minutes until cheese is melted and bubbly.
  • Serve: Garnish with optional toppings and slice into squares or wedges.

Notes

  • For extra flavor, sprinkle cooked bacon bits or jalapeños before baking.
  • Make ahead: Prepare gravy and eggs the night before, assemble in the morning, and bake.
