- 1 block 8 oz / 225 g feta cheese
- 2 pints about 4 cups cherry tomatoes
- 3 garlic cloves minced
- ¼ cup 60 ml olive oil
- ½ tsp red pepper flakes optional, for heat
- Salt And black pepper to taste
- 12 oz 340 g pasta (penne, rigatoni, or your choice)
- ¼ cup 15 g fresh basil leaves, chopped
- Optional: grated Parmesan cheese for serving
Preheat oven to 400°F (200°C).
Place cherry tomatoes in a baking dish. Drizzle with olive oil, add garlic, red pepper flakes, salt, and pepper. Toss to coat.
Place the block of feta in the center of the dish, nestling it among the tomatoes. Drizzle with a little more olive oil.
Bake for 30–35 minutes, until tomatoes burst and feta is soft and golden.
Meanwhile, cook pasta according to package instructions. Reserve ½ cup of pasta water, then drain.
Remove the baking dish from the oven. Stir the feta and tomatoes together to create a creamy sauce.
Add cooked pasta to the dish and toss until coated. Use reserved pasta water if needed for creaminess.
Sprinkle with fresh basil and Parmesan (if using). Serve warm.
