Baked Feta Pasta: A Viral Sensation Made Easy

This viral baked feta pasta is a creamy, tangy, and flavorful dish made with roasted cherry tomatoes, a block of feta cheese, garlic, and pasta. The oven does most of the work roasting the feta and tomatoes until soft and bubbly, then tossing them with hot pasta for a deliciously simple weeknight meal.

Ingredients
  

  • 1 block 8 oz / 225 g feta cheese
  • 2 pints about 4 cups cherry tomatoes
  • 3 garlic cloves minced
  • ¼ cup 60 ml olive oil
  • ½ tsp red pepper flakes optional, for heat
  • Salt And black pepper to taste
  • 12 oz 340 g pasta (penne, rigatoni, or your choice)
  • ¼ cup 15 g fresh basil leaves, chopped
  • Optional: grated Parmesan cheese for serving

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Place cherry tomatoes in a baking dish. Drizzle with olive oil, add garlic, red pepper flakes, salt, and pepper. Toss to coat.
  • Place the block of feta in the center of the dish, nestling it among the tomatoes. Drizzle with a little more olive oil.
  • Bake for 30–35 minutes, until tomatoes burst and feta is soft and golden.
  • Meanwhile, cook pasta according to package instructions. Reserve ½ cup of pasta water, then drain.
  • Remove the baking dish from the oven. Stir the feta and tomatoes together to create a creamy sauce.
  • Add cooked pasta to the dish and toss until coated. Use reserved pasta water if needed for creaminess.
  • Sprinkle with fresh basil and Parmesan (if using). Serve warm.

Notes

  • Add spinach, arugula, or roasted vegetables for extra nutrition.
  • Substitute feta with goat cheese or ricotta for a different twist.
  • Gluten-free pasta works well in this recipe.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
