- 2 lbs 900 g potatoes, peeled and cut into chunks
- 4 tbsp butter
- ½ cup 120 ml warm milk or cream
- Salt And black pepper to taste
- 1 medium onion finely sliced
- 1 tbsp olive oil or butter for sautéing onions
- 1 tsp fresh thyme or ½ tsp dried
- 2 sheets pie crust store-bought or homemade
- 1 egg beaten (for egg wash)
Preheat oven to 375°F (190°C).
Boil potatoes in salted water until tender, about 15–20 minutes. Drain, mash with butter and warm milk, then season with salt and pepper. Set aside.
In a skillet, heat olive oil and sauté onion until soft and golden, about 8 minutes. Stir in thyme.
Roll out one pie crust and fit into a greased pie dish.
Spread half of the mashed potatoes into the crust, then layer with sautéed onions. Add the remaining mashed potatoes on top.
Cover with the second pie crust, sealing edges well. Cut small slits on top to vent steam.
Brush with egg wash for a golden finish.
Bake for 35–40 minutes, or until crust is golden brown.
Let rest 10 minutes before slicing and serving.
