Authentic Irish Potato Pie: A Hearty Delight

This Irish Potato Pie is a rustic and hearty dish made with layers of creamy mashed potatoes, sautéed onions, and buttery pastry. Traditionally served as a comforting side or simple main, it’s perfect for St. Patrick’s Day or any cozy family dinner. The golden, flaky crust with a rich potato filling makes it both humble and satisfying.

Ingredients
  

  • 2 lbs 900 g potatoes, peeled and cut into chunks
  • 4 tbsp butter
  • ½ cup 120 ml warm milk or cream
  • Salt And black pepper to taste
  • 1 medium onion finely sliced
  • 1 tbsp olive oil or butter for sautéing onions
  • 1 tsp fresh thyme or ½ tsp dried
  • 2 sheets pie crust store-bought or homemade
  • 1 egg beaten (for egg wash)

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Boil potatoes in salted water until tender, about 15–20 minutes. Drain, mash with butter and warm milk, then season with salt and pepper. Set aside.
  • In a skillet, heat olive oil and sauté onion until soft and golden, about 8 minutes. Stir in thyme.
  • Roll out one pie crust and fit into a greased pie dish.
  • Spread half of the mashed potatoes into the crust, then layer with sautéed onions. Add the remaining mashed potatoes on top.
  • Cover with the second pie crust, sealing edges well. Cut small slits on top to vent steam.
  • Brush with egg wash for a golden finish.
  • Bake for 35–40 minutes, or until crust is golden brown.
  • Let rest 10 minutes before slicing and serving.

Notes

  • Add shredded cheddar cheese between potato layers for extra richness.
  • Bacon bits or leftover corned beef can be added for a heartier version.
  • Can be served warm or at room temperature.
  • Best enjoyed with a fresh green salad or Irish stew.
